madeleines recipe

hey everyone,

i thought i would share one of my all time favorites, madeleines! my mom and i bake often, and we’ve made all sorts of cookies and decorations but this one is a classic.

madeleines – a french butter cake basically, and they’re scalloped on one side, with the edges.  the pan is needed to bake these are made especially for madeleines, and the shell shape is what makes the madeleine so recognizable.  underneath is the recipe that i use for my madeleines:

2 large eggs

2/3 cup of sugar

1 tsp of vanilla extract

1/2 tsp of grated lemon peel

pinch of salt

1 cup of all purpose flour

1 stick of butter, melted


step 1: preheat oven to 375 degrees

step 2: butter and flour pan

step 3: in electric mixer, beat eggs and sugar

step 4: beat in vanilla, lemon peel, salt.  then add flour, beat until blended

step 6: add melted butter

step 7: spoon 1 tbsp into each mold

step 8: bake 16 minutes


and with that, you’re done!  you can also dip them in melted chocolate when you’re done, which i’m a big fan of.

however, madeleines aren’t for everybody, so coming up in winter are my christmas sugar cookies (decorated with icing) and valentines day cookies :)
